Abstract

The purpose was to address the importance of measuring the carbon footprint of post-harvest cocoa residues at F&C's Finca Integral Forestal in Ecuador. The study used a quantitative, non-experimental methodology focused on measuring and describing the carbon footprint. A panel of experts is held with the intention of proposing practices that promote the circular economy. The results reveal that cocoa residues have a high composition in calories and carbohydrates, highlighting the mucilage as the main generator of CO2eq compared to the exocarp. In conclusion, cocoa residues will generate high levels of CO2, but this can be reduced with the revaluation of these residues due to their nutritional properties, which pro-moves the practice of circular economy within the farm.
