Objective: to analyze food-borne diseases as a global health problem. Method: Descriptive documentary. Conclusion: Foodborne diseases continue to represent a critical global public health challenge, compounded by the persistence of old problems and the emergence of new threats in a context of climate change and globalization. Analysis of the findings underlines the urgent need to implement integrated and adaptive strategies that address regional specificities, improve the effectiveness of food safety inspections and strengthen international cooperation. Only through a coordinated and sustained global approach will it be possible to mitigate the impact of these diseases, protect the health of the most vulnerable populations and ensure food security in a changing world.
